Make friends with a new winter/spring staple: the rutabaga. This root vegetable is a good source of fiber and vitamin C and is delicious when cubed, drizzled with olive oil, sprinkled with salt, seasoned with a dash of maple syrup, and roasted until the edges turn brown.
